Well, all good things must come to an end. Since we've been celebrating all things pumpkin with #PumpkinWeek - many, many thanks to Terri of Love and Confections for organizing this week - I decided to end with a pumpkin cocktail. Hot'N'Spicy Pumpkin Margarita

Ingredients
Jalapeno-Pumpkin Simple Syrup
  • 1-1/2 C water
  • 1-1/2 C brown sugar
  • 1 jalapeno, sliced
  • 4 cinnamon sticks
  • 1 t ground nutmeg
  • 1/2 t ground cloves
  • 1/4 t ground ginger
  • 3 T pumpkin puree (how to make homemade pumpkin puree)

Cocktail
  • 2 ounces tequila
  • 1/2 ounce orange liqueur (I use Cointreau)
  • 2 ounces of Jalapeno-Pumpkin Simple Syrup
  • 1/2 lime
  • Also needed: cocktail shaker, ice



Procedure
Jalapeno-Pumpkin Simple Syrup
Add water and sugar to a sauce pan and heat slowly. Swirl the pan until the sugar is completely dissolved. Lower the heat and whisk in the pumpkin puree. Add the jalapeno slices and spices. Cook for five minutes, stirring occasionally. Remove from heat and let the flavors infuse while it cools. Strain out the peppers and spices. Set aside.

Cocktail
Fill cocktail shaker with ice. Pour in the simple syrup, tequila, and orange liqueur. Squeeze in the lime juice. Cover and shake for at least 30 seconds. Strain into an ice-filled glass. Enjoy!

Quick Pickled Red Onions and Radishes

If you've been reading my blog for even a short amount of time, you probably know how much I love to pickle things. I was just telling a friend you can pickle - with vinegar - or you can ferment - with salt - for similar delicious effect. The latter has digestive benefits and I love to do that, but when I need that pop of sour flavor quickly, I whip up quick pickles that are ready in as little as a day or two. I've Pickled Blueberries , Pickled Asparagus , Pickled Cranberries , Pickled Pumpkin , and even Pickled Chard Stems ! This I did last night for an upcoming recipe challenge that requires I include radishes. Ummmm...of course I'm pickling them!
